Cheese, Lambs and Monk Beer

These past two weekends were spent trekking through the Sibillini Mountains of Italy, enjoying breathtaking views and fresh air.  The Sibillini Mountains are located in the Apennines mountain range, also referred to as the "spine" of Italy.  The Sibillini National Park is a quick drive from Ascoli, only 40 minutes to an hour.  Last weekend we spent the day walking from Norcia to another small town (can't remember the name of it).  The trip took about six hours and we took a few pit stops.   We stopped at a farm that raises sheep for pecorino cheese.  The sheep were busy giving birth... literally.   We got to see a lamb that was 20 minutes old and saw many other ones frolicking in the fields. We also got to taste their pecorino cheese and see where it was made.  Other stops included on this hike were to an ancient church, an abbey (place where monks live) and a hermitage (home to an Irish Monk who served for the United States Marines).  Once we got back to Norcia, which is known for their lentils, pecorino cheese and wild boar products, we stopped at a Monk Brewery. Yes, these monks brew their own beer.

pecorino cheese!
